Delightful Cookbook, perfect for Entertaining and Everyday
10/11/11| Martha KelleyWhen we were on vacation this summer, my fellow food adoring husband found this great cookbook, Pestos, Tapenades, and Spreads, by Stacey Printz. We tried a couple of her recipes for the Mediterranean Pot Luck we recently hosted, and they were a smashing success. We made sea bass topped with Pistachio-Herb Pesto, and this, my new favorite, Roasted Beet Spread, which we served on toasted crostini with soft goat cheese. I have never liked beets before in my life, they just seemed unappealing, sitting cold and cubed in the salad bar. Roasting the beets brings out a subtle and rich flavor that has got me craving this simple, healthy, and delicious recipe again soon, very soon. As the cookbook author, Stacey Printz writes, "The eye-catching color alone makes this recipe worth whipping up." Additional serving suggestions- Add to spinach salad, use as sandwich spread, mix with cooked pasta, or just eat it by itself with a spoon. Yes, it's that good.
This is a delightful cookbook that really delivers on "little fuss, enormous flavor", and I look forward to trying more of her wonderful recipes.
