Delightful Cookbook, perfect for Entertaining and Everyday

When we were on vacation this summer, my fellow food adoring husband found this great cookbook, Pestos, Tapenades, and Spreads, by Stacey Printz. We tried a couple of her recipes for the Mediterranean Pot Luck we recently hosted, and they were a smashing success. We made sea bass topped with Pistachio-Herb Pesto, and this, my new favorite, Roasted Beet Spread, which we served on toasted crostini with soft goat cheese. I have never liked beets before in my life, they just seemed unappealing, sitting cold and cubed in the salad bar. Roasting the beets brings out a subtle and rich flavor that has got me craving this simple, healthy, and delicious recipe again soon, very soon. As the cookbook author, Stacey Printz writes, "The eye-catching color alone makes this recipe worth whipping up." Additional serving suggestions- Add to spinach salad, use as sandwich spread, mix with cooked pasta, or just eat it by itself with a spoon. Yes, it's that good.

This is a delightful cookbook that really delivers on "little fuss, enormous flavor", and I look forward to trying more of her wonderful recipes.
